You would be fine in full steel set, it is very efficient. The two armor sets that have the best combination of both Poise and Defense are the Steel Set and Venstadt's Set. Sort by Poise to Weight and Defense to Weight. *Best Heavy armor set for tanking? for mobility? Also, you may want to look at the Quartz Rings +3 or Dispelling Ring +1 for non-physical tanking. Blades is fine, you are not going to be wearing Flynns so it is one of the only ways to increase your damage. Royal Soldiers (as high as you can get) and Dragon Rings (Third) are also likely what you want. You are going to need Chloranthy +2 since you are going to likely have high equip load. You are going to have plenty of physical defense, so skip Steel Protection. Humanity is easy enough to get back, just co-op. I would not recommend the Ring of Binding or the Ring of Steel Prot actually. *For Rings, I Plant to use Ring of binding, Ring of blades, and Ring of Steel protection.
